STUFFED TOMATOES WITH TUNA & SACLÀ WINE VINEGAR CAPERS

Ingredients

  • Round ripe tomatoes 4
  • Tuna in olive oil, drained 6.3 oz
  • Saclà wine vinegar capers 1 tsp
  • Cream cheese 3.2 oz
  • Chives as needed
  • Extra virgin olive oil as needed

METHOD

  • Slice off the tops of the tomatoes and scoop out the inside, keeping the pulp for the filling
  • In a blender, combine the drained tuna, tomato pulp, cream cheese and the Saclà wine vinegar capers
  • Blend until smooth and creamy
  • You can also add a few extra capers to the mousse for more texture and flavor
  • Fill the tomatoes with the mixture using a piping bag
  • Finish with a few mint leaves, a drizzle of extra virgin olive oil and black pepper
