STUFFED TOMATOES WITH TUNA & SACLÀ WINE VINEGAR CAPERS

Ingredients
- Round ripe tomatoes 4
- Tuna in olive oil, drained 6.3 oz
- Saclà wine vinegar capers 1 tsp
- Cream cheese 3.2 oz
- Chives as needed
- Extra virgin olive oil as needed
METHOD
- Slice off the tops of the tomatoes and scoop out the inside, keeping the pulp for the filling
- In a blender, combine the drained tuna, tomato pulp, cream cheese and the Saclà wine vinegar capers
- Blend until smooth and creamy
- You can also add a few extra capers to the mousse for more texture and flavor
- Fill the tomatoes with the mixture using a piping bag
- Finish with a few mint leaves, a drizzle of extra virgin olive oil and black pepper
