SAVORY FRITTERS WITH SACLÀ PITTED GREEN OLIVES

Ingredients
- Re-milled semolina flour 8.8 oz
- White wine 8.5 fl oz
- 1 egg
- Instant yeast for savory recipes 1 tbsp
- Parmesan cheese 1.8 oz
- Sweet paprika 1 tsp
- Salt 1 pinch
- Extra virgin olive oil 1 tbsp
- Saclà pitted green olives 2.8 oz
- Peanut oil for frying
METHOD
- Add the flour to a mixing bowl and slowly whisk in the white wine until smooth
- Add the egg and mix until combined
- Stir in the sifted instant yeast, then season with grated Parmesan cheese, paprika, a pinch of salt and a drizzle of extra virgin olive oil
- Keep whisking until the batter is smooth and fully combined
- Drain the Saclà pitted green olives, slice them into rounds and fold them into the batter
- Heat about 1 inch of peanut oil in a small saucepan and, once hot, fry the fritters by dropping spoonfuls of batter into the oil
- When golden brown, transfer the fritters to paper towels to drain
- Serve hot for the perfect appetizer or aperitivo snack
